What was determining the NCAA football title like in pre-BCS years?

When I got started watchin' college football, I can remember that the Rose Bowl had it's tradition of the Pac-10 & Big Ten champs playing, & I think the Orange Bowl determined the national title. What were the arguments for determining the NCAA championship like b4 the BCS was established? & were the Cotton & Peach Bowls more significant bowl games earlier?
